Mint and Rosemary Lemonade with Vanilla

Try this new twist on your standard lemonade! This is a great recipe that you can serve at all summer gatherings. If you would like to serve this as an adult beverage, just add vodka!

Ingredients:

  • 8 large lemons washed and sliced in ½ inch slices

  • 1 cup Sucanat natural sugar or granulated sugar

  • 10 sprigs of fresh mint leaves

  • 2 sprigs of fresh rosemary

  • ½ vanilla bean scraped seeds or 2 teaspoon vanilla extract

  • 8 cups of cold water 

  • Ice 

Instructions:

  1. Place a medium mesh strainer in a bowl. Set it aside.

  2. Scrape the seeds of the vanilla bean and place them in a small bowl. Do not discard the vanilla pod.

  3. Place lemon slices, sugar, mint, rosemary, vanilla seeds, and pod in the strainer.

  4. Using your clean hands, gently massage the lemons to juice them as well as mix all contents.

  5. Cover it with plastic stretch film and place it in the fridge for at least 3-4 hours or preferably overnight.

  6. In the morning, with clean hands massage the lemons again to get all their juices out. Strain and discard the solids.

  7. Pour the concentrated lemon juice into a large pitcher and stir in 8 cups of cold water.

  8. Pour into mason jars filled with ice and garnish fresh rosemary.
