What motivates you to eat healthy?
I have type-2 diabetes which could shorten my life if I don't eat nutritious and balanced meals. That automatically means I need to choose fruits and vegetables that will help me keep my blood sugar in range and boost my overall health. Eating healthy is only one part of maintaining good health but it's one of the easier parts for me and the most enjoyable!
How are you going to stay healthy this summer?
I am going to eat less meat this summer. I am not ready to give it up completely so I am going to start by having no meat 2 days a week with the goal of increasing it to 3 days a week. The remaining days will include leaner, lighter meat like chicken breasts and seafood and no red meat.
Why is food insecurity important to you?
Access to the basic necessities of life is a right of everyone on the planet. I think about how I function when it's been more than 5 hours since I ate any food. It ain't good. I cannot imagine how I could be anywhere near as productive if I was not eating consistently and nutritiously but unfortunately there are so many, too many who know exactly what it's like to skip a meal. Not to lose weight or promote spiritual clarity but because they do not have a choice. It tells me that we have failed our fellow humans if we can hold a phone in our hand or use a laptop while drinking coffee and read a blog but someone else hasn't eaten today and might not tomorrow. Or the next day. I think if everyone had enough food, consistently and it was nutritious, we could solve so many of the other problems in this world.
