Diabetes and Carbs? I thought I only had to watch my sugars?

When struggling with diabetes, many patients struggle with changing their diets. A lot of people think they only need to cut down on desserts and sugar-like foods. However, carbohydrates can be just as damaging, and I will tell you why …….

The Science:

Glucose serves as an energy source for the body; however, high levels of glucose (hyperglycemia) can lead to health issues. Insulin from the pancreas breaks down glucose in the body. People with Diabetes have decreased insulin production. Therefore, they are unable to breakdown the glucose in the bloodstream. Now, it isn't only sugar in desserts that turns to glucose. It can be carbohydrates as well, such as bread, pasta, peanut butter, and various other grain products.

Shocking right? I know. Refined carbs (white flour foods like white bread) are the worst kind of carbs for our diabetic patients. These types of carbs are very processed and therefore, easily absorbed in the body. However, I have some great news for you; there is such a thing as a "healthy carb". A healthy carb would be whole grains and fiber. Whole grains are not easily absorbed in the body and are slow to enter the bloodstream. Fiber is a great component because, although it is still a carbohydrate, it does not get broken down into glucose. Some examples of whole grains are:

  • Brown rice

  • Quinoa

  • Oatmeal

  • Wild rice

  • Whole grained bread

This change can be beneficial for those with prediabetes as well. Counting your carbs can help you maintain a safe glycemic range. Ask your physician about carb counting at your next visit.
